“I am sure every food lover can remember a very special entree or dessert from a memorable dining experience. But how often does one experience a delicious and unique 5-course dinner, when afterwards, the guests cannot agree on which course was the “star” of the meal? That happened at our home when we hosted a Colorado Music Festival dinner, and Hosea and his team prepared our dinner.
The entire seasonal menu was unusual in composition, creatively and artfully presented, and simply delicious. Our guests raved about the opener, a chilled corn soup with avocado and huitlacoche (Mexican truffles). Next, a “salad” of coriander cured salmon, beets, and citrus, married with a lightly smoked yogurt. The third course was one of Hosea’s signature dishes…coffee roasted duck breast served on a hash of confit leg, fig, and heirloom beans. Then porcini-dusted beef striploin accompanied by truffled gnocchi and a charred onion chimichurri. And in keeping with the seasonal bounty, the desert was a summer berry clafouti topped with rosehip gelato. Our guests were delighted with the dinner, but simply could not agree on which course was “the best.”
I think it is also important to add that it was easy and stress-free to arrange the dinner with Hosea’s team, and the evening of the event they were engaging with the guests and fun to have in the kitchen. And when they left at the end of the evening, our kitchen was spotless.
