The Blackbelly Butcher Shop is dedicated to providing the highest quality meats in a manner reflective of times long past. We take immense pride in our craft, featuring livestock from many Colorado farms and ranches. This means we only sell all natural, hormone and antibiotic-free meats.

Hours and Special Requests:
Our butcher counter is open Monday thru Friday
7am -6pm and Saturday from 11am-5pm. The shop is closed on Sunday.

Breakfast and Lunch are available Monday thru Friday.

Breakfast: 7am-11am

Lunch: 11am-3pm

Our in-house, whole-animal butchery program provides guests with custom cuts of meat, fresh sausages, salumi and charcuterie unavailable at mainstream markets. The end result is a modern experience that preserves an old world butcher shop approach.

Special orders are welcome via phone or in person, and will be available to pick up on Wednesdays and Fridays only.  No special orders will be processed without payment in advance. 48 hour minimum advanced notice is required.

Meet our Butcher Nate Singer: 
Nate comes to us from Cody, Wy. Growing up learning  the craft from his father, a master butcher who's been at it for 40 years. Their family restaurant, Cassie's, is located at the east gate of Yellowstone. Nate recently returned from the East Coast, where he  worked at Maine Meat in Kittery, ME, honing his craft. He is currently building  our butcher  program focusing on honesty, sustanability, and  local sourcing of  livestock.
