Blackbelly Market is the first restaurant by award-winning chef Hosea Rosenberg. Our menu is founded upon locally-sourced, sustainable, organic food. Our bar features seasonal cocktails, local beers and a world class wine list.

Blackbelly is located in Boulder’s up and coming East Boulder neighborhood. Our restaurant features plentiful parking and a range of seating options, including dining room tables, a chef’s counter, a quaint, 8 person bar and 2 outdoor patios.

We are open for dinner at 4pm, 7 nights a week. Happy hour is daily from 4-6.

Chef Hosea launched Blackbelly Catering in late 2011. Blackbelly Catering set out to become the Front Range's premier boutique catering and events company.  We strive for perfection in everything we do, from the hand picked organic ingredients, to our unparalleled service. Our core business is founded on bringing the private chef experience to you.  We pride ourselves on exceptional private dinners and celebrity chef experiences, corporate events, weddings, cocktail parties and more.

Let us assist in making your dream event a reality!  As an experienced full-service caterer, the Blackbelly Catering Team will provide you with the tools to make your event a success and exceed your expectations. Our experienced team will walk you through the entire process, starting with choosing the right venue, to customizing your menu, and everything in between.

For a less formal option, we also offer lunch service in the form of drop-off and individually packaged meal offerings and our version of the party tray.

The Blackbelly Butcher Shop is dedicated to providing the highest quality meats in a manner reflective of times long past. We take immense pride in our craft, featuring livestock from many Colorado farms and ranches. Foundationally speaking, this means that we only sell all natural, hormone and antibiotic-free meats.


Hours and Special Requests:
Our butcher counter is open Monday thru Friday
7am -6pm and Weekends from 11am-5pm for walk in business. Special orders are welcome.  Requests can be emailed to, and will be available to pick up throughout our market hours as well as during our dinner service. 

Breakfast and Lunch are available from our market counter Monday thru Friday. Our dining room is available to sit and enjoy your meal but please note that our breakfast & lunch are counter style, and dinner is full service.

Our in-house, whole-animal butchery program allows us to provide you with custom cuts, fresh sausages, salumi and charcuterie unavailable at mainstream markets. The end result is a modern butchery experience that instantly re-establishes the pride of the old school butcher shop.

Meet our Butcher Nate Singer: 
Nate comes to us from Cody, Wy. Growing up learning  the craft from his father, a master butcher who's been at it for 40 years. Their family restaurant, Cassie's, is located at the east gate of Yellowstone. Nate recently returned from the East Coast, where he  worked at Maine Meat in Kittery, ME, honing his craft. He is currently building  our butcher  program focusing on honesty, sustanability, and  local sourcing of  livestock.
